I love a good bit of planning & I do have an old run rail that I hang my clothes on to make outfits with as it's much more visual than chucking stuff on the bed.
Carry on only for many years. I only travel maybe once a year to visit my family, but the ability to always have my possessions in hand is really important to me. Unforeseen delays also are mitigated when I have everything with me.

I love the simplicity of a small pack and few choices. My problem is I spend forever planning. The smaller the pack the longer I plan. Really wish I could have back the five months I spent planning my interrail backpack just carried a few more items...
I always aim to pack and ship myself lightly but somehow I often bring too much along, or end up bringing too much back! That 'just in case" gets me every time too, Louise...next time I'll plan better!!
These are all excellent tips. I've also done an 11 day Iceland cruise with carry-on.
Serious planning and coordination is the way to do it.
But, if you plan on shopping, you will need to bring another folded bag. One will be checked on the way home. Or, elect for larger bag to check from the start.
My recent trip to Scotland, 18 days, had everything fit in carryon. But since I knew I was buying whiskey and tartan wool products, we went larger and checked it.
All that to say that it depends on destination, season and shopping.
And yes, if you are plus-sized, it is even more challenging. Thermal leggings for Iceland take a lot of space.
I'm amazed you can pack ski gear in a carry-on! It's the bulky stuff like that that always gets me. I follow all the advice about wearing the bulkiest garments on the plane and picking items that roll up smaller, but my case always still seems to fill up with a handful of bulky items that can't really be replaced by something smaller - a pair of ankle boots, a pair of jeans, a few bras and there's suddenly no space around them big enough for my tightly rolled blouses and lightweight cardigans!

It sounds amazing but as a plus sized woman it just never works for me no matter how tight I roll things lol!

Yes I do unfortunately- lol
